This goes particularly well with cornbread and honey. The recipe is vegan If you omit the topping suggestions.
1 Tbl. olive oil
1 onion, diced
Saute in medium pot. Then add:
4 cloves garlic, minced
2 Tbl. chili powder
2 tsp. ground coriander
1 bay leaf
1 tsp. anise seed, ground (or powder) (optional)
Saute 2 minutes.
28 oz. (large) can of tomatoes, crushed or puréed
1 small can red kidney beans, drained and rinsed
1 small can pinto beans, drained and rinsed
2 jalapeno peppers, diced, or ½ t. cayenne, or both!
Add and simmer uncovered for 30 minutes.
