KALE CHIPS From the recipe box of travel writer Carole Terwilliger Meyers. Follow her Travels With Carole blog.
This is a less spicy take-off on the delicious Trader Joe’s version. The chips are especially nice to leave out for guilt-free snacking as you wander in and out of the kitchen.
1/2 bunch of kale, washed and dried (about two big handfuls; Trader Joe’s sells a 10-ounce bag of cleaned fresh kale) 1 Tbl. olive oil 1 Tbl. soy sauce 1 Tbl. sesame seeds Remove stems and tear kale into bite-sized pieces. In a large bowl, whisk together oil and vinegar. Toss with torn kale. Cover a large baking sheet with aluminum foil. Place kale pieces in a single layer (for crispy kale, leaves should not overlap).
salt & pepper to taste
350 degrees, 20 minutes, or until chips are crispy. Let cool. Serve.
