CHOCOLATE CHIP-OATMEAL COOKIES From the recipe box of travel writer Carole Terwilliger Meyers. Follow her Travels With Carole blog.
Try some variations: the more traditional semi-sweet chips, or butterscotch chips, or colorful M&Ms (minis were used in cookies depicted), or white chips with macadamia nuts). And don’t forget to stock up on milk!
1 cup butter (2 sticks), soft 1¼ cup brown sugar Cream.
2 eggs 1 tsp. vanilla Beat in.
1½ cup flour 1½ cup oats (regular or quick); or optionally sub in ½ c. wheat germ or oat bran 2 tsp. baking soda Mix until blended well. Don’t overbeat.
¾ cup milk chocolate chips ¾ cup walnuts, chopped Stir in.
Place a heaping tablespoon of dough on a greased cookie sheet. 350 degrees, 10 minutes.
